A grain bowl with greens, avocado, cucumber and a green dressing

This is the lunch I recommend most to clients who hit an energy slump mid-afternoon. The mix of slow-release carbs, plant protein and healthy fats keeps blood sugar steady, and the dressing makes it feel like a treat.

Make it ahead: cook the grains and dressing on Sunday and you’ll have bowls ready in five minutes all week. Keep the dressing separate until you eat.
